TAFE Queensland hosts Aussie Meat Academy

Queensland beef took centre stage at TAFE Queensland’s South Bank campus recently, as sixteen Internationally renowned chefs visited the kitchens as part of the Aussie Meat Academy.

Organised by Meat and Livestock Australia, the Aussie Meat Academy connects, educates and inspires chefs to achieve success with Australian red meat through its “Aussie Beef Mates” program.

The Aussie Beef Mates comprise a group of influential, passionate, loyal and committed food professionals from all over the world who grow the global profile of Australia’s world-class beef.

Sixteen Aussie Beef Mates chefs from Asia, the USA, the United Arab Emirates, Mexico, Saudi Arabia and the United Kingdom visited TAFE Queensland to share their knowledge with 32 of our cookery students.

This unique event also saw the Aussie Beef Mates inspire students through a Q&A and cooking masterclass to showcase inspiring beef cooking techniques.

The students also partnered with the visiting international chefs to work together and create an entrée and a main in a unique team challenge, giving them a deeper understanding of cooking at a higher level.

Each team received ingredients to plan, prepare and cook their dishes in the South Bank campus’s industry-standard kitchens before plating and serving them to a select group of judges.

The students also gave a five-minute presentation of each dish and participated in a five-minute Q&A referencing their tasks and what they learned.

Formed in partnership with Meat & Livestock Australia and Trade and Investment Queensland, the Aussie Meat Academy delved into Queensland’s beef production - from paddock to plate.

Director of Faculty Pat Dennis said hosting the international chefs and facilitating a masterclass in TAFE Queensland’s kitchens using locally sourced beef was invaluable for enhancing our students' learning.

“Queensland beef is enjoyed worldwide and is renowned for being a high-quality, sustainable product,” said Mr Dennis.

“Bringing international chefs and food professionals to our South Bank campus to share their knowledge and skills to create amazing cuisine is priceless.”

“There’s no better way to learn about the industry and its products than by spending time with food professionals as passionate as the Aussie Beef Mates.”

Following the visit to Queensland, the Aussie Beef Mates returned to their home countries to promote our internationally renowned beef by sharing their experiences, knowledge and insights gained from their time in Australia.
